Kumbalakayi Raitha or Sweet Pumpkin Raitha is a favorite in our house. The sweet vegetable when mixed with the Yogurt sauce with a crunchy Black Gram seasoning is a dish we eat with Vegetable Bhath, Plain Rice, and Rotis.

Ingredients:
2 Cups Sweet Pumpkin, Diced
2 Green Chilies
1/2 Cup Fresh Coconut
1tbsp Fried Gram
3 Cups Curds
2 sprigs Coriander leaves, chopped finely
Salt to taste
For the Seasoning:
2tsp Oil
1tsp Bengal Gram
1tsp Urad Dal/Black Gram split
1tsp Mustard Seeds
1/2tsp Turmeric Powder
Few Curry leaves
Method:
Dice the Pumpkin into half inch square pieces. Boil the pieces in water until cooked. Be careful not to over cook the Pumpkin. Remove the pieces and keep it aside to cool.
Grind the Coconut, Green Chilies and Fried Gram to a paste. Add this paste to the Sweet Pumpkin pieces along with Salt, Coriander leaves, and Curds and mix well.
Heat Oil in a kadai and add Bengal Gram, Urad Dal and Mustard Seeds. When the Gram turns pink and the Mustard starts to splutter, remove from heat and add the Curry leaves and Turmeric Powder. Add this to the Curd mixture (Raitha) and mix well.
Serve Sweet Pumpkin Raitha with Rice or any Indian Bread.
