Hesarukalu Kosambari is a South Indian salad with sprouted green gram. A very healthy dish, this is usually prepared for lunch in most of the households.

Time Required: 10 Minutes + Soaking time
Ingredients:
2 Cups Sprouted Hesarakalu / Whole Green Gram
1 Cup Grated Carrots
2 Green Chilies Chopped
Few Curry leaves
Juice of 1 Lemon
3 sprigs of Coriander leaves
1tsp Oil
½ tsp Mustard Seeds
½ Cup Freshly grated Coconut
Salt to taste
Method:
In a salad bowl mix Hesarukalu, Carrot, Green Chilies, Lemon Juice, Coconut, Coriander Leaves and salt and mix well. Heat Oil and add Mustard seeds, when they splutter add Curry leaves. Add this to the Hesarukalu mixture and mix well.
Serve with your choice of Indian Bread, Rice and Saaru (Rasam) or like a healthy snack.
