Sabbakki Payasa is a pudding prepared using Sago pearls. The Sago pearls become transparent when cooked and appear like bubbles in Milk, which children love to play with in the plate.
Time Required: 20 Minutes + Soaking time
Ingredients:
1/4 Cup Seemeakki/Sabbakki/Sago Pearls/Sabudana
1/4 Cup Sugar
3 Cups Milk
1 Cardamom powdered
Few Cashew nuts fried in Ghee
Few Raisins
Method:
Soak Seemeakki in 1/2 Cup water for 30 minutes or 1 hour.
Add Milk in a thick-bottomed pan and add the Sabbakki.
Cook until Sabbakki is cooked.
Add Sugar and keep stirring. Cook until you get the consistency that you want.
Add Cardamom Powder, Cashew nuts and Raisins and mix well.
Remove to a serving dish and serve.

Everytime I make sabbakki payasa, more or less I follow same procedure as you have written. But, only difference is I soak sabbakki for more than 4 or 5 hours so that it is easy to cook, but no idea why the consistency is not coming properly. Sabbakki settles down and it remains watery level above. But taste will b good. So while serving i remove watery level .Can u pls let me know if I have to fry sabbakki and then soak or any other tip that makes consistency proper.

There is no need to fry Sabbakki. You can try by reducing the water used to soak the Sabbakki.
