Amathi is a curry prepared using Peas.
Cuisine: North Karnataka and Maharashtra.
Time Required: 25 Minutes
Serves: 4
Ingredients:
2 Cups Shelled Green Peas
2 Sprigs Coriander, Chopped
2 Sprigs Curry leaves
A pinch of Asafoetida
2tbsp Grated Jaggery
¼ cup thin Tamarind water
4 one inch piece Dry Coconut burnt and crushed
4 to 5 Cardamom Peels
1 Green Chili, slit
Salt to taste
For Masala Powder:
4tbsp Coriander Seeds
1tbsp Jeera / Cumin Seeds
2 Cloves
4 – 6 Red Chilies
For Seasoning:
1tbsp Oil
1tsp Mustard Seed
A pinch of Asafoetida
A pinch of Turmeric Powder
Method:
Boil shelled Peas in 3 cups of water. Fry the ingredients for the powder separately in little Oil and make a powder. Add the Masala powder, Curry leaves, Jaggery, Tamarind water, Cardamom Peels, Green Chilies and bring it to a boil. Add Salt and again bring it to a boil.
Heat Oil in another pan and add Mustard Seeds, Asafoetida and Turmeric Powder. Add this to the Peas curry and mix well. Add Coriander leaves and the burnt Coconut and remove from heat. Serve with plain rice and Balaka / roasted dry Green Chilies.
This dish can also be prepared with or Avarekalu / flat beans or Soppina Kadale / Fresh and green Chik peas or Bengal Gram.
