A side dish prepared using Chayote Squash.
Time Required: 20 Minutes
Ingredients:
2 Seemebadanekayi / Chayote Squash / Chow Chow
1tbsp Oil
1tsp Bengal Gram
1tsp Urad Dal
1tsp Mustard Seeds
½ tsp Turmeric Powder
Few Curry Leaves
2 – 3tbsp Grated Coconut
3 Green Chilies slit
Salt to taste
Method:
Peel and chop Seemebadanekayi into small pieces. Heat Oil in a pan, add Bengal Gram, Urad Dal and when they turn pink, add Mustard Seeds and when they splutter add Turmeric Powder, Curry leaves, Green Chilies and stir. Add the vegetable, Salt and a cup of water and close the vessel and cook until the water evaporates. Add Coconut and mix. Serve with Rice and Saaru / Rasam or Chapathi / Phulka.
