An unusual combination of Potatoes and Okra mixed with spices.

Ingredients:
12 – 15 Bhindi / Lady’s finger / Okra, Chopped into roundels
2 Alu / Potatoes, Peeled and Chopped
2 Onions, Chopped finely
3tbsp Oil
½ tsp Turmeric Powder
2tsp Aamchur / Dry Mango Powder
2tsp Coriander Powder
2tsp Chili Powder
Salt to taste
Method:
Heat 2tbsp Oil and fry Bhindi until the sticky substance disappears. Keep it aside. Heat another tablespoon of Oil, add Potatoes and stir-fry till the Potatoes are soft. Keep it aside. Heat another tablespoon of Oil and add Onions, sauté for a minute or two. Add Turmeric, Aamchur, Coriander and Chili Powder, stir. Add Potatoes and Bhindi and mix well with the masala. Add Salt and stir. Serve Alu Bhindi hot with Phulka, Paratha or Pulav.
