Shrikhand is a sweet dish prepared using curd cheese. This dish is very popular in North Karnataka, Maharashtra and Gujarat. The procedure shown here is how traditionally Shrikhand is made in North Karnataka homes.
Cuisine: North Karnataka, Maharashtra and Gujarat
Time Required: 20 Minutes
Ingredients:
4 Cups Curds / Yogurt
¾ Cup Sugar
1tsp Cardamom Powder
Few strands of saffron soaked in milk
Method:
Tie curds in a cotton cloth and hang it for 4 to 5 hours in a suitable place for making curd cheese.
Remove the curd cheese to a bowl and add Sugar and mix well.
To a vessel tie a thin cotton cloth. Put the Curd-Sugar mixture over it and rub it over the cloth.
The smooth mixture is collected in the vessel.
To this add Cardamom and Saffron and mix well.
Remove to a serving bowl. During summer you can cool it in the refrigerator before serving.
Serve Shrikhand with Poori or Chapathi.

A Tip: If you whip sugar in a constant direction for 3 minutes then it forms more foam and no lumps as well.
