My mami used to prepare this dish for breakfast when we visited them for summer vacations in North Karnataka. The dish is rich in protein and is good for growing children and also keeps them from feeling hungry soon. In Maharashtra this dish is known as Matki Chi Usal.
Time Required: 20 Minutes + Soaking Time
Ingredients:
2 Cups Sprouted Madki Kalu / Matki / Moth Beans
1tsp Chili Powder
2tbsp Grated Jaggery
2tsp Oil
1tsp Mustard Seeds
Few Curry Leaves
Juice of 1 Lemon
2 Sprigs Coriander Leaves, Chopped finely
½ Cup Fresh Grated Coconut
Method:
Cook Matki with Chili Powder, Jaggery and Salt in the pressure cooker. Drain out the water. Heat Oil and add Mustard Seeds and when they splutter add Curry Leaves. Add the cooked Matki and mix well. Add Lemon, Coconut and Coriander leaves and mix well. Serve with your choice of Indian bread.
