A simple side dish prepared using Ladies finger / Okra. This is popular in Tamil Nadu and Karnataka (Bhendekayi Palya).
Time Required: 25 Minutes
Ingredients:
25 Vendekai / Bhendekayi / Bhindi / Okra, Chopped into thin roundels
½ “ Ginger juliennes
4 Green Chilies, Slit
Few Curry Leaves
4tbsp Oil
1tsp Kadalebele / Bengal Gram
1tsp Uddinabele / Urad Dal / Black Gram Split
½ tsp Mustard Seeds
½ tsp Cumin Seeds
A pinch of Sugar
¼ Cup fresh Coconut, Grated
Salt to taste
Method:
Heat 2tbp Oil and add Vendekai and fry until crisp. Heat the rest of the Oil and add Bengal Gram, Urad Dal, Mustard Seeds, and Cumin Seeds. Add Ginger, Green Chilies, and Curry leaves. Add Salt, fried Vendekai, and Coconut and mix gently. Serve with Rice and Rasam or Chapathi.

My kids love Benedekaayi Palya. Do you have any tips about how to get rid of the “stickiness’ in Bendekaayi, considering 1 tbsp of oil has 120 calories. I am trying to find ways for low-fat cooking. Hence I usually cook them in the Microwave oven for 5 minutes before transferring to the pan, but I have also noticed that as soon as salt is added, the stickiness increases. Just an observation.

Solution to this is either use Olive oil or use 1tbsp Oil and fry for a minute and then squeeze some lemon juice or aamchur powder to remove the stickiness.
