Amla Ki Launji is an instant pickle prepared using Indian Gooseberries.

Ingredients:
6 – 8 Bettada nellikayi / Amla / Indian Gooseberries
5 Green Chilies or Dry Red Chilies, Cut into 1″ pieces.
1 inch Ginger, Chopped
3 – 4 tbsp Sugar
1 – 2 tsp Red Chilli powder
1/2 tsp Turmeric Powder
3 tbsp Oil
1/2 tsp Fenugreek Seeds
1 tsp Fennel Seeds / Saunf
A pinch of Asafoetida
Salt to taste
Method:
Pressure cook the Gooseberries. Separate the segments from the seed. Remove the seeds and separate the segments. Heat oil, add Fennel seeds and Fenugreek.
When the Fenugreek turns pink, add Gooseberries, Green or Red Chilies, and Ginger. Stir-fry for a minute or two.
Add the rest of the ingredients and toss. Cover the vessel and cook on a low flame for a minute or two.
After it cools, remove to a dry jar. Serve with your choice of Indian Bread or Plain Rice and Dal.
