During Dasara it is customary to arrange dolls in the house and distribute sweets and savories to the kids around the house. Why not be adventurous and distribute homemade colorful Eggless Doughnuts this time!?
Makes: 24 Doughnuts
Time Required: 2.5 to 3 hours (including raising time)
Ingredients:
250 gms Maida / Flour
1tsp Yeast
60 gms sugar
100ml Water / Milk
Milk 25 – 35 ml
6tbsp Butter
2tbsp Milk Powder
½ tsp Salt
½ tsp Baking Powder
½ tsp Vanilla Essence
1 Potato, boiled and grated
Oil for deep frying
1 Cup White Chocolate compound, Grated or chopped into pieces
1 Cup Dark Chocolate compound, Grated or chopped into pieces

Method:
Warm 2 tbsp of Milk and add 2tsp Sugar and Yeast to it. Leave it aside.
Sieve Maida and Milk Powder. Add Yeast Milk and the remaining Water / Milk. Bind the mixture to a dough using only your fingers. Be gently, do not knead.
On flat surface, preferably the kitchen platform cream Butter and Salt. Incorporate this into the dough using palms. Roll the dough using both your hands in a “V” shape. Roll for at least 10 minutes until the dough becomes smooth and silky. Do not put too much pressure on the dough.
Cover the dough with a wet cloth or cling film and rest for 45 minutes or until the dough is double the volume.
On the floured kitchen platform punch the risen dough to remove the excess air. Add Baking powder, Grated Potato, and Vanilla essence and gently prepare the dough.
Dust a tray. Cut the dough into pieces using a knife. Do not pinch the dough.
On a floured surface roll the dough to 1/4 inch thickness.
Cut with the doughnut cutter.
Arrange these on the dusted tray and close with a wet cloth and leave it aside for 30 minutes to rise.
Heat Oil in a pan.
Melt White Chocolate and Dark Chocolate and keep it nearby.
Deep fry the doughnuts till they turn golden brown.
Dip each one immediately into the Chocolate sauce and remove to a tray.
Sprinkle colored Sugar or Sugar Balls and serve.
Instead of Chocolate, you can dip the doughnuts in Cinnamon and Sugar powder.
