Bhojpuri Choka is a lip-smacking dish prepared using Eggplant, Potatoes, and Tomatoes.

Ingredients:
2 medium sized Baingan / Eggplant, Charred, peeled, and mashed
2 Potatoes, Boiled, peeled, and mashed
3 Tomatoes, Charred, peeled, and chopped
1 – 2 tbsp Oil
2 – 3 Green Chilies, Chopped finely
2 Onions, Chopped finely
Few sprigs of Coriander leaves, Chopped finely
½ tsp Turmeric Powder
1 tsp Chili Powder
Juice of one Lemon
Salt to taste
Method:
Heat Oil and add Turmeric Powder. Add Tomatoes and stir for a minute.
Add mashed Baingan, Potatoes, and Salt.
Stir and remove from heat.
Add Onions, Green Chilies, Lemon juice, and Coriander leaves. Mix well.
Serve Bhojpuri Choka with Phulka or sprinkle some sev and sweet chutney over it and serve as Chaat.
