Me and my friend used to swap our lunch packs in school on days when she would get soft Idlis with Brinjal Patchadi/Eggplant side dish and I would have got Chapathi and Palya/Side dish. I think this spicy Patchadi makes a very good low calorie accompaniment to Idlis. I learnt to prepare this dish from my friend’s mom.
Time Required: 20 Minutes
Ingredients:
4 Brinjals/Egg Plant/Aubergine
5 Tomatoes
6 – 8 Green Chilies
Few Curry leaves
1tbsp or 1tsp Oil
1tsp Mustard Seeds
Salt to taste
Method:
Cut Brinjals and boil them in water until they are soft. Chop Tomatoes and Green Chilies finely. Heat Oil and add Mustard Seeds and when they splutter add Curry leaves, Green Chilies, Tomatoes and stir-fry for 2 minutes. Sieve the Brinjals reserving the water. Add the Brinjal pieces and stir. Keep mashing the Brinjals and add a cup of reserved water if the mixture is too thick. Add Salt and mix well. Serve hot with Idlis or plain Rice.
