Steamed Rice cakes with Cucumber.
Ingredients:
1 Cup Idli Rawa
2 Cups Cucumber, Grated
1/4 Cup Coconut, Grated
1/4 Cup Coconut, Chopped
3 Green Chilies
1tsp Asafoetida
3tbsp Coriander Leaves, Chopped
2tbsp Curry Leaves, Chopped
Salt to taste
For the Seasoning :
1tsp Ghee
1tsp Mustard Seeds
Method:
Grind Asafoetida, Green Chilies and grated Coconut to a paste remove to a mixing bowl. To this paste add Cucumber, Idli Rawa, Coriander Leaves, Curry Leaves, Chopped Coconut pieces and Salt. Mix well to form the batter for Idli. Heat Ghee, add Mustard Seeds and when they splutter remove and add to the batter. Mix well.
Grease Idli plates and pour the batter into the moulds and steam for 15 minutes. Remove and serve hot with your choice of Chutney.
