Mallige Idli is steamed rice cake. This is a healthy breakfast served in almost all South Indian households. Mallige means Jasmine flower. The end product of this recipe are Idlis as soft as the Jasmine flower!

Ingredients:
2 Cups Idli Rice
1/2 Cup Uddinabele / Urad Dal / Black Gram Split
1/2 Cup Avalakki / Poha / Flattened Rice
Salt to taste
Method:
Soak Rice and Uddinabele separately for 4 to 5 hours.
Just before grinding Rice and Uddinabele, soak Avalakki. Grind Uddinabele and keep aside. Grind Rice and Avalakki to a smooth batter and mix with Uddinabele batter. Leave it aside for 6 to 8 hours to ferment.
Add salt to the batter and mix well. Add batter into Idli molds. Steam in a cooker for 10 minutes.
Remove from cooker and let it cool for 2 minutes.
Remove from molds. Serve hot with Coconut Chutney and Sambar.
