Nutritious vegetable dosa that can be served with no accompaniments!

Ingredients:
1 tsp Oil
1 tsp Jeera
1 tsp Mustard Seeds
A pinch of Turmeric Powder
1 Bowl Dosa Batter with Salt
½ Cup Beans, Chopped finely
½ Cup Carrot, Peeled and Chopped finely
½ Cup Potatoes, Peeled and Chopped finely
½ Cup Cabbage, Chopped finely
Few Curry leaves, Chopped finely
½ Cup Capsicum, Chopped finely
2 – 4 Green Chilies, Chopped finely
¼ tsp Salt
Method:
Boil Vegetables.
Heat Oil, add Jeera and Mustard Seeds, when they splutter, add Turmeric Powder, Curry leaves, Green Chilies, and Capsicum and stir.
Add the boiled Vegetables and stir. Add ¼ tsp Salt and mix.
Add the Vegetable mixture to the Dosa Batter and mix well. Heat a Tava and pour a ladleful of Batter and spread to form a concentric circle.
Add Oil all around and roast on both sides.
Remove Dosa to a serving plate.
Serve hot Vegetable Dosa with your choice of Chutney and steaming hot filter coffee.
