Sweet Corn Burritos

Burrito is a wheat flour tortilla stuffed with Vegetables, Rice, or Bean and folded into a cylindrical shape. Sweet Corn Burritos is stuffed with Sweet Corn and Capscium.

Time Required: 30 Minutes

Ingredients:
4 Tortilla Wraps
1 Cup Boiled Sweet Corn
1 Onion, Chopped finely
1 Cup Capsicum, Diced
Few Sprigs of Coriander leaves, Chopped finely
Few Jalapeno Pickle
4 Cloves Garlic, Chopped finely
4 Cheese slices, Cut into strips
2tbsp Cream Cheese
2tbsp Mint Mayonnaise
1tbsp Chili Flakes
2 – 3 tbsp Salsa
1tbsp Olive Oil
Salt to taste


Method:

Heat Oil and add Garlic, Onions and Capsicum and saute for a minute.

Add Boiled Sweet Corn, Chili Flakes, Salsa, and Salt. Mix well.  Add Coriander leaves and toss.

Remove to a bowl.  Take a Tortilla Wrap on a plate and spread Mint Mayonnaise and Cream Cheese on it.

Add a spoonful of Corn mixture in the middle of the wrap.  Place few cheese slices over it.

Close the mixture with the wrap and serve.
