A sweet chutney with a hint of spice prepared using Raw Mangoes.
Time Required: 30 Minutes
Ingredients:
2 Cups Grated Raw Mango
1 Cup Grated Jaggery
7 Dry Red Chilies
1tsp Methi (Fenugreek) Seeds
1tsp Sesame Seeds
3 tsp Dry Coconut, Powdered
2tbsp Oil
1tsp Mustard Seeds
Salt to taste
Method:
Roast Chilies, Methi Seeds and Sesame Seeds separately. Grind each one to a powder. Heat Oil in a kadai and add the Mustard Seeds, when they splutter add the Raw Mango and fry on medium flame for 2 minutes. Add the Jaggery and mix well. Cook for 3 minutes, continuously stirring. Add Chili Powder, Methi Powder and Sesame Powder and mix well. Next add Coconut and Salt and cook until the mixture starts leaving the sides of the kadai.
Remove from heat and let it cool. Store in glass jars.
This chutney tastes best with Khakra, Bread, Phulka or Paratha. Serve Butter too…
