Kanda Lasun Kolhapuri Masala

Kanda Lasun Kolhapuri Masala is a masala powder prepared using Onions and Garlic.  This powder can be added to vegetables like Brinjal / Aubergine, Ladies Finger, Ridge Gourd, Bottle Gourd, and so on.

Time required: 20 Minutes.

Ingredients:
1 Onions, sliced finely
10 Garlic pods, peeled and slices
2 tbsp Dry grated Coconut
2 tbsp Red Chili Powder
1 tsp Coriander Powder (Optional)
1/4 tsp Black pepper powder
1/4 tsp Cumin seeds / Jeera
1 tsp Black Cumin / Shah Jeera
1 Black Cardamom
1/4 inch Cinnamon / Dalchini
2 – 3 Cloves
1/2 Star anise
Few pieces of Mace / Jaivetri
2 tbsp Oil
Salt to taste

Method:

Dry roast all the ingredients separately except for Salt, Chili, Coriander, and Black Pepper powders, Onion and Garlic. Heat Oil and fry the onion and Garlic until the water evaporates. Remove on a kitchen towel and let it cool.

Grind all the ingredients together to a powder. Store in a dry airtight container.
