Tomato Thokku

Tomato Thokku is very popular in South India.  It is usually very spicy and goes very well when mixed with hot Rice and Ghee.

Time Required: 20 Minutes

Ingredients:
5 – 6 Tomatoes, Chopped finely
1½  tbsp Red Chili Powder
1tsp Menthya / Methi / Fenugreek seeds
1 tsp Mustard Seeds
½ tsp Turmeric Powder
Few Curry leaves
3tbsp Oil
Salt to taste

Method:
Heat Oil in a thick-bottomed pan.  Add Mustard Seeds, and when they splutter, add Menthya, Turmeric Powder, and Curry leaves.

Add Tomatoes and stir fry for 3 minutes.  Add Chili Powder and Salt and mix well.  Cook until the moisture evaporates.

Remove to a dry and airtight container.

When stored in refrigerator Tomato Thokku lasts for a longer time.
