Beetroot Sambar is prepared using Green Gram Dal and Beetroot.

Ingredients:
1 Beetroot, Peeled and cubed
1 Cup Green Gram Dal / Hesarubele / Moong Dal
1 Onion, Chopped finely
1 Tomato, Chopped finely
1/2 Cup grated Coconut
1 tsp Jaggery (Optional)
2 tbsp Sambar / Huli Powder
1 – 2 tbsp Oil
1 tsp Mustard Seeds
1 tsp Cumin Seeds / Jeera
Few Curry leaves
Salt to taste
Method:
Cook Green Gram Dal and Beetroot until soft.
Grind Coconut and Sambar Powder to a paste and keep it aside. Heat Oil and add Mustard Seeds and when they splutter add Cumin Seeds and Curry leaves. Add Onion and saute for a minute. Next add Tomatoes and cook for a minute.
Add Coconut masala, Green Gram Dal, Beetroot, Jaggery, and Salt and let it cook for 5 minutes.
If the mixture is too thick add one cup water. Remove to a serving dish.
Serve hot with plain rice.
