Curry prepared using Onions or Shallots. This is best eaten with plain Rice, Idlis/Rice Cakes and Pancakes/Dosas.

Ingredients:
2 medium sized Onions, Chopped into big pieces or 20 Shallots, Peeled
1 Drumstick (optional), cut into 2 inch pieces
1 Tomato, Chopped
1 small lemon sized Tamarind soaked in water
3/4 Cup Tur Dal/Red Gram Split
3tbsp Sambar Powder
1/2 Cup Fresh Coconut
1 small piece Jaggery/Molasses (Optional)
Salt to taste
For the Seasoning:
1tbsp Oil
1/2 tsp Mustard Seeds
1/4 tsp Turmeric Powder
Few Curry Leaves
2 Dry Red Chilies, Broken
Method:
Cook Tur dal and keep aside. Boil Drumstick with little Salt, drain and keep aside. Grind Sambar Powder and Coconut to a paste. Add Onions to Tur Dal and cook. Add the Sambar paste to it. Extract Tamarind pulp and add this to the Tur dal mixture along with Tomatoes, Drumstick, Jaggery and Salt. Let it boil for 5 minutes. If it is too thick add more water.
Heat Oil and add Mustard Seeds and when they splutter, add Turmeric Powder, Curry leaves and Red Chilies. Add this to the Sambar and mix well. Remove to serving dish.
Serve hot Onion Sambar with plain rice, Idlis/Rice Cakes or Pancakes/Dosas.
