Vaali Ambat is a curry prepared using Malabar Spinach and lentils.

Ingredients:
1 bunch Malabar Spinach / Vaali / Basale Soppu
1 Onion, Chopped
½ Cup Pigeon Pea split / Tur Dal / Thogaribele
2 tbsp Oil
Salt to taste
For the masala:
1 Cup freshly grated Coconut
1 tbsp Coriander seeds
4 – 8 Red Chilies
4 inches Tamarind
For the seasoning:
2 tbsp Oil
1 tsp Mustard Seeds
1 tsp Turmeric powder
2 – 3 Garlic pods, Crushed
Method:
Fry Coriander Seeds and Red Chilies in a teaspoon of Oil. Grind all the ingredients for the masala to a paste.
Roughly chop Malabar Spinach leaves along with the tender stems and cook along with Onions until soft.
Cook Tur dal until soft and remove to a thick-bottomed vessel and mash.
Add masala and cooked Malabar Spinach to the dal and mix well. Add Salt and cook for 5 minutes.
Heat Oil for the seasoning and add Mustard Seeds, when they splutter add Garlic and Turmeric powder. Add this to the dal and mix well. Serve hot with plain rice.
