This is a simple eggless sponge cake with flaky chocolate icing. I always feel like baking during Christmas and New Year time.
Time Required: 1 Hour
Ingredients:
3 Cups Flour/Maida
1½ Cups of Water
2 Cups of Sugar
3/4 Cup of Unsalted Butter
2 Cup Yogurt/Curd
2½ tsp Baking Soda
1tsp Cooking Soda
2tsp Vanilla Essence
For the Icing:
4tbsp Butter
2tbsp Cocoa Powder or 4 one inch size cooking chocolate
2tbsp Milk
½ Cup Icing Sugar
Method:
Sieve flour with Baking Soda and Cooking Soda. Melt butter and add to the flour. Add the other ingredients and fold in. Grease a baking tray and pour the mixture into it. Pre-heat the oven and bake at 180 degrees for 40 minutes.
Remove the cake and allow it to cool.
For the Icing:
Soften Butter and mix all the ingredients to a smooth paste. As we are having a flaky chocolate icing, do not add too much of milk. Spread this on the top of the cake and on the sides.
I have spread it only on the top of the cake.
Grate some nutty chocolate over the icing. Cut into pieces and serve.
