Annada Kesaribhath is a delicious aromatic festive Rice, prepared using whole spices, Sugar and Saffron. This is prepared during festivals.

Ingredients:
2 Cups Basmati Rice
2 Cups Sugar
4 Cardamoms, Crushed
6 Cloves
5cm Cinnamon stick (Optional)
10 Almonds and Cashew nuts
1 tbsp Raisins (Optional)
Few strands of Saffron
4 tbsp Ghee
Method:
Wash and soak Rice for at least one hour. Cut Almonds into thin long pieces. Bring 1 1/2 cups water with Sugar and Cardamoms to a boil and keep it aside.
Heat Ghee in a handi/vessel, add Cloves, Cinnamon, Almonds and Raisins. Fry for half a minute. Add Rice and 2 1/2 cups of water. Bring it to a boil. Add Saffron and cook on low heat till the Rice is almost cooked. Sieve Sugar syrup into the Rice. Mix gently. Continue to cook on a low heat till the Rice is done and the syrup is dry.
Add Ghee and mix well. Serve Annada Kesaribhath hot.
