Tomorrow is Hindu New Year – Ugadi. This festival is celebrated by worshiping god and eating Neem flowers mixed with Jaggery signifying the bitter-sweet experiences of life. Festival food is prepared on this day to usher in the New Year.
Balehannina Payasa / Banana Payasa is a pudding prepared using ripe bananas, jaggery, and coconut milk.
Time required: 20 Minutes
Ingredients:
2 Ripe Banana
1 Cup Grated Jaggery
2 Cups Coconut Milk
1/4 tsp Cardamom Powder
Almonds, Cashew nuts – chopped and fried in Ghee (clarified butter)
Method:
Peel Banana and make roundels. Cook using little water until soft. Mash them.
In another vessel, mix a cup of water to Jaggery and let the Jaggery melt.
Sieve the Jaggery and add to the mashed Banana.
Let it cook for a minute. Keep stirring. Add Coconut milk and mix well.
Cook for a minute or two. Keep stirring. Add Cardamom powder and the fried nuts. Mix well. Remove to a serving dish.
Serve hot Banana Payasa.
