Happy Deepavali to all my readers!
Let us celebrate this Diwali with a healthy and delicious sweet dish without sugar. This dish is nutritious as it is prepared using using only dry fruits, nuts, and seeds.
Ingredients:
1 Cup Dates, I have used Madjool dates
1 Cup Dry Fruits, like Almonds, Cashew nuts, Pistachios, Walnuts, Pecans
1/2 Cup Seeds, like Melon, Pumpkin, Sesame seeds, Poppy Seeds
1/4 tsp Elaichi / Cardamom Powder
1 tbsp Ghee / Clarified Butter
Method:
Remove seeds from the Dates and roughly chop them and keep aside. You can also make a paste in the blender.
Chop Almonds, Cashew nuts, and Pistachio into medium size pieces and then dry roast in a pan for 2-3 minutes and keep it aside. Dry roast the seeds and keep them aside.
Heat Ghee in a non-stick pan and add Dates paste and keep stirring for 2 minutes. Add the nuts and seeds and mix well. Keep stirring on low heat until well combined. Add Cardamom powder and mix well. Remove the mixture on a greased surface and shape it into a log.
Wrap in the butter paper and store in refrigerator for an hour.
Remove and slice them into roundels.
Store in an airtight container.
