Kashi Halwa is the most common sweet dish served during wedding breakfast in Karnataka. This is also prepared during other festivals too. Rich with ghee floating around the crunchiness of the Ash gourd makes for a satiating sweet dish.

Ingredients:
1 cup Grated Booda Kumbalakayi / Ash Pumpkin
¼ cup Sugar
3 tbsp Ghee / clarified butter
¼ tsp Cardamom Powder
A pinch of Saffron
Few Cashew nuts, fried in Ghee
Method:
In a thick-bottomed pan, add the pumpkin and cook until the water is evaporated.
Add Sugar and mix well. Add Saffron.
Let the sugar dissolve.
Stir continuously until the mixture thickens.
Add Ghee and mix well.
Cook until the mixture is light and fluffy.
Add Cardamom and Cashew nuts and mix well.
Remove to a serving dish.
Serve hot Kashi Halwa.
