Sandesh is a sweet dish prepared using Cottage Cheese a favorite in West Bengal, India.

Ingredients:
1 liter Milk
Juice of 1 Lemon
7 tbsp Sugar
Few Strands of Saffron soaked in Milk
1/2 tsp Cardamom Powder
Few Pistachios, thinly sliced
Method:
Boil Milk and add Lemon juice to make Paneer.
Combine Paneer and Sugar and blend to make a paste.
Remove the paste to a non-stick pan.
Cook Paneer and Sugar paste over low heat stirring continuously until the mixture becomes light and fluffy.
Remove from heat. Add Saffron and Cardamom powder or any other flavoring of your choice and mix well.
Divide into equal size balls.
Press each of these balls into Sandesh moulds to give different shapes or flatten all of the mixture on a greased tray and cut into desired shapes.
Garnish with a slice of Pistachio and Saffron milk.
