Ragi / Finger Millet is a powerhouse of calcium and is extremely good for people of all ages. Ragi Malt is a powder that can be stored for a long time, which is prepared using sprouted Ragi, Dry Fruits and Milk Powder in Karnataka. The powder is mixed with either hot milk or cold milk and served.
Time Required to make the powder: 2 to 3 days
Time Required to make the drink: 2 Minutes
Ingredients:
1 Cup Ragi / Finger Millet / Nachni
½ Cup Milk Powder
10 Almonds, Blanched and Peeled
10 Pistachios, Blanched
3 Cardamoms, Powdered
¾ Cup Sugar Powder
To Serve:
2tbsp Ragi Malt
2 Glasses of Milk
Method:
Soak Ragi overnight. Drain the water and tie in a cloth tightly to sprout for 8 to 10 hours. Open the cloth and spread the Ragi on a cloth in a shaded place to dry.
Roast Almonds and Pistachios for minute or two. Grind Almonds, Pistachios to a powder and keep it aside.
Grind Ragi to a powder and sieve the powder through a thin cloth. Dry roast the powder for a minute or two on low flame. Let it cool. Mix ragi powder along with Milk Powder, Sugar, Cardamom Powder, Almond-Pistachios powder and store in dry airtight container.
To Serve:
Mix Milk and Ragi Malt. Pour into glasses and serve either hot or cold.
