Puffed bread prepared using Rice Flour, which is very popular in Coorg district. “Ubba” in Kannada means puffed up.
Time Required: 25 Minutes
Ingredients:
2 Cups Rice Flour
Add 2 tbsp Refined Flour / Maida or 1/2 Cup mashed cooked Rice
Hot water
Method:
Take Rice flour and Maida in a mixing plate and pour little hot water on it and mix the flour. Keep adding the required quantity of water and mix to a dough and keep it aside covered with a wet cloth.
Take a small ball of dough and on a floured surface slowly flatten the ball into a thin circle using either a rolling pin or your hands.
Heat a griddle and put the rolled out Rice Rotti/bread over it and wet the side facing up using a damp cloth.
Just after 30 seconds flip the Rice Rotti/bread and roast for a minute. Remove the Rotti and put it on the flame directly and remove.
Serve hot Akki Ubba Rotti with Steamed Chilies Chutney or Badnekayi Palya/Brinjal side dish.
This bread is such that it goes will with any accompaniment. It can be pickles, butter, chutney powder, and so on.
