Thambuli is a side dish prepared using fresh Ginger or Thyme Leaved Gratiola or Spanish Thyme in Yoghurt. This is excellent during hot summers when combined with hot Rice and Ghee/Clarified butter.
Brahmi Tambuli

Ingredients:
2 inches Ginger root or 2 Cups Brahmi/Thyme Leaved Gratiola or 1 Cup Doddapathre/Thambuli Yele/Cuban Oregano
3 Green Chilies
½ tsp Jeera/Cumin Seeds
½ Cup Coconut
1tbsp Fried Gram / Hurigadale
1 Cup Curds/Yoghurt
1 tsp Oil
½ tsp Mustard Seeds
1 Red Chili, Broken
Salt to taste
Doddapathre (Spanish Thyme/Cuban Oregano)
Brahmi/Centella asiatica
Method:
Wash and peel Ginger/Thyme Leaved Gratiola/Spanish Thyme. Grind this along with Green Chilies, Fried Gram, Jeera and Coconut. Remove to a mixing bowl and add Salt and Curds. Mix well. Heat Oil, add Mustard Seeds and when they splutter add Red Chilies and pour this over the Ginger mixture.
Ginger Tambuli
Mix well and serve with plain Rice.
