Coconut Rice

This is also known as Thuppada anna / Ghee Rice, which is very popular in Karnataka.

Time Required: 20 Minutes

Ingredients:
4 Cups Cooked Rice
1 sprig Curry leaves, Chopped finely
5 – 6 Green Chilies, Chopped finely
4 sprigs Coriander leaves, Chopped finely
1½ Cup fresh grated Coconut
2tbsp Oil
1tsp Ghee / Clarified Butter (Optional)
1tbsp Kadalebele / Bengal Gram
1tbsp Uddinabele / Black Gram split
1tsp Mustard Seeds
Salt to taste

Method:
Heat Oil and Ghee in a Kadai.  Add Kadalebele/ Bengal Gram and Uddinabele / Black Gram split and when they turn pink add Mustard Seeds and when they splutter add Curry leaves, Green Chilies and stir for few seconds. Add Salt, Coconut, Coriander leaves and Rice and mix well. Serve with Kosambari or Chutney.
