Ghee Rice

Ghee Rice is a very popular dish in Kerala. A very simple to make dish with oodles of Ghee / Clarified Butter.

Time Required: 30 Minutes

Ingredients:
1 Cup Basmathi Rice
4 tbsp Ghee
1 Onion, Chopped finely
1 Green Chili, Slit
2 Bay Leaves
3 – 4 Cloves
2 pieces of Cinnamon
3 Cardamoms
10 Cashew nuts
10 Raisins
Salt to taste

Method:
Heat Ghee, add Bay Leaves, Cinnamon, Cardamoms, Cashew nuts and Onions. Sauté until the Onions turn light brown.  You can add Ginger-Garlic paste at this stage.  I have not added, as it overtakes all the other flavors.

Add Green Chilies, Basmathi Rice, Raisins, and Salt. Add 4 Cups of water and close the vessel and cook until the Rice is done.


Serve hot with Dal and Raitha.

Thali contains, Ghee Rice, Dal Makhani, Makki Roti, Kalan, Alu Posto, Bhindi Alu, and Stuffed Red Chili Pickle.
