Italian Black Rice

Italian Black Rice

As soon as Black Rice was available in the local store, I bought it and make this delicious Italian Black Rice.  A big change from the usual Indian Rice dishes.

Ingredients:
1 ½ cups Italian black rice
2 tbsp Olive oil
4 Garlic cloves, finely diced
1 Onion, sliced
1 Red Pepper, thinly sliced
½ tsp Red Chili Flakes
Few Basil leaves
Few Mint leaves
1 tsp Dried Herbs
Few Pecan Nuts, Roasted
Juice of 1 Lemon
½ Cup Corn, Steamed
Black Pepper Powder to taste
Cheese cube, grated
Salt to taste

Method:

Wash and cook the Rice in a vessel.  Do not cook in pressure cooker.

Heat Oil in a thick-bottomed pan.  Add Garlic, Onion, and Red Pepper and saute for two minutes.

Add Chili flakes, Salt, Pecan Nuts, and the dried herbs.  Cook for 2 minutes.  Add Lemon, Black Pepper and stir.

Add Basil and Mint and remove to a serving dish. Garnish with cheese and serve hot.
