Rice flavored with Green Chilies and lots of Lemon juice. Lemon Rice is an important dish during auspicious occasions like weddings and also during festivals in Karnataka. This is also very popular street cart food. You will see plenty of them serving Lemon Rice on a Banana leaf with Chutney and a Masala Vada tucked on the side.

Ingredients:
3 Cups cooked Rice
1tbsp Coriander Leaves, Chopped finely
¾ Cup Grated fresh Coconut
Juice of 1 Lemon
Salt to taste
For the Seasoning:
1tbsp Oil
2tsp Bengal Gram
1tsp Urad Dal (Black split Gram)
1tbsp Ground Nuts
3-4 Cashewnuts, broken (Optional)
1tsp Mustard Seeds
1tsp Turmeric Powder
1 Dry Red Chili, broken
3 Green Chilies, Chopped finely
Few Curry Leaves
Method:
Heat Oil in a kadai/pan and add Bengal Gram, Urad Dal and Ground Nuts. Fry until they turn pink, add cashew nuts and stir for 10 seconds and remove them from the Oil and add to the Rice. Now, in the remaining Oil, add Mustard seeds and Red Chili. When the Mustard seeds splutter add Green Chilies, Curry Leaves and Turmeric Powder.
Pour this seasoning over the Rice and add Coconut, Salt, Lemon Juice and Coriander Leaves and mix thoroughly.
Remove to a serving dish.
Serve with Masala Vada, Chutney, and Carrot Kosambari.
