A salad with an unusual combination of Basmati Rice and Yellow Pepper.
Time Required: 20 Minutes + Chilling Time
Ingredients:
1 Cup Basmati Rice
1 tsp Ghee / Clarified Butter or Olive oil
1 Yellow Pepper
2 Onions
2 Tomatoes
4 Leaves, Chinese Cabbage or Lettuce
2tsp Olive Oil
Juice of 1 Lemon
2tbs Parsley or Coriander leaves
2tsp Vinegar
1tsp Freshly ground Pepper
1tsp Dry or Fresh Basil
2 Pods Garlic, Chopped finely
Salt to taste
Method:
Cook Rice with Ghee, Salt, and Pepper and chill. Cut Yellow Pepper into thin strips. Chop Onion finely. Peel Tomatoes and chop finely. In a small bowl mix Olive Oil, Lemon, Parsley, Vinegar, Pepper, Basil and Garlic and keep aside for 2 to 3 minutes.
In a mixing bowl mix Tomatoes, Onions and Yellow Pepper. In a serving tray arrange the Cabbage or Lettuce leaves and spread a layer of Rice over the leaves.
On the Rice spread a layer of vegetables mixture.
Pour the dressing over it.
Serve Basmati and Yellow Pepper Salad with toast or chips on the side.
