Sauthekayi Hesarubele Kosambari – Split Green Gram Cucumber Salad

Cucumber Kosambari

Raw Cucumber and soaked gram mixed with seasoning.  This is prepared in Karnataka especially during festivals.  During Rama Navami festival, Kosambari is offered to god as Naivedya / Blessed food.

Time Required: 10 Minutes + Soaking Time

Ingredients:
1 tender Sauthekayi / Cucumber
½ Cup Hesarubele / Green Gram Split
2tbsp Coriander Leaves
½ Cup Fresh Grated Coconut
3 Green Chilies, Chopped finely
Juice of 1 Lemon
Salt to taste

For the Seasoning:
2tsp Oil
1tsp Mustard Seeds
Few Curry leaves

Method:
Peel and chop the Cucumber finely. Soak Green Gram for 40 minutes. Mix Cucumber, Green Gram, Coriander Leaves, Green Chilies and Coconut and keep it aside.

Heat Oil in a pan and add the Mustard Seeds and when it splutters remove from heat and add the Curry Leaves. Add this to the Cucumber along with Salt and Lemon juice and mix well.

Serve with Mango Rice, Lemon Rice….
