By now you all might know that I love making salads with fruits, which eliminates the need to add sugar or honey to the dressing. Civeche is prepared using raw fish and I have substituted it for Lychee. Here is the vegetarian friendly Lychee Civeche.
Ingredients:
2 Cups of Lychee segments
1/2 Cup Onion sliced
1/2 Cup Cucumber sliced
Juice of 1 Lemon
1/4 tsp Red Paprika
Few sprigs of Coriander leaves, chopped finely
Salt to taste
Method:
Combine the ingredients in a salad bowl and toss gently.
Chill for half an hour and serve.
