I was in Delhi last Friday and my friend served this simple, yet delicious salad for dinner. I re-created this recipe this Friday at home.
Time Required: 20 Minutes
Ingredients:
1 Seedless firm Cucumber
2tsp Ginger, Chopped finely
1tsp Olive Oil
2tbsp Vinegar
2tbsp Sugar
Method:
Cut the Cucumber into slices. Mix Ginger and Olive Oil in a mixing bowl. Add Cucumber and mix well. Leave it aside for 10 minutes. In a small bowl, mix Sugar and Vinegar. Add Sugar and Vinegar to the Cucumber slices just before serving. Toss gently and serve.
