Bean curd Salad is a complete healthy meal.
Time Required: 20 Minutes
Ingredients:
A slab of Tofu, cut into cubes
Few tender Spinach leaves
Few Spring Onions, Chopped finely
1 Yellow Pepper, thinly sliced
1tbsp Roasted and peeled Groundnuts
½ Cucumber, sliced
½ Firm Avocado, sliced
Few Sprigs Coriander, Chopped finely
Few Cherry Tomatoes, halved
For the dressing:
1tbsp Olive Oil
1tbsp Red Wine Vinegar or plain Vinegar
1tsp Ground Black Pepper
1 Green Chili, Chopped finely
Juice of 1 Lemon
1tsp Powdered Sugar
Salt to taste
Method:
Roast the Tofu cubes.
Mix all the ingredients for the dressing in a bowl.
In a salad bowl, add Tofu and other greens and vegetables.
Pour the dressing and toss gently. Chill and serve.
