Tossed Salad

Tossed salad is easy to make and is extremely healthy. I always make this as everybody in the house likes the colors in the salad.  This salad goes well with any of the Indian Bread.

Time Required: 15 Minutes

Ingredients:
1 Carrot or Yellow and Green Capsicum – Use either carrot or capsicum
1 Tomato
1 Onion
2 small Cucumbers
Few Olives
Few Marjoram leaves
Few Thai Basil leaves or few sprigs of Coriander leaves, chopped finely
2 Pods Garlic, Chopped finely (Optional)

For the dressing:
2 tsp Olive Oil
Juice of 1 Lemon
Pepper Powder to taste
Salt to taste

Method:
Peel Cucumber and Carrot (if using) and slice them thin and long. Slice Capsicum (if using). Slice Onions.  Tear Marjoram and Basil leaves. De-seed the Tomato and slice. Mix the ingredients for the dressing in a bowl.

Just before serving add the dressing to the vegetables and toss them in a salad bowl. Chill and serve.
