Water Chestnut Salad as the name suggests is prepared using Water Chestnuts, which are very rare to find in South India. When I did find them, prepared this salad as an accompaniment with Phulkas. Water Chestnuts adds a nice crunch to the salad. Water Chestnuts are available only during November and December.
Time required: 10 Minutes
Ingredients:
12 Water Chestnuts, sliced
1 small Cucumber, sliced
1 Apple, sliced
Juice of half Lemon
2 to 3 tbsp Roasted Peanuts
2 Dry Red Chilies
1 tbsp Avocado Oil
1/4 tsp Roasted Jeera / Cumin Powder
Few sprigs of Coriander leaves, finely chopped
Black Salt or plain Salt to taste
Method:
In a small bowl mix Oil, Salt, Jeera, Lemon Juice and mix well. Keep it aside. Crush Red Chilies and Peanuts together.
Add the rest of the ingredients in a mixing bowl. Add the seasoning and Red chili-Peanuts.
Toss gently.
Add Coriander and toss. If needed, chill for half an hour and serve.
