Shavige Uppittu is a breakfast dish prepared using Vermicelli. Also known as Vermicelli Upma. This is on the menu for breakfast in South India.

Serves: 4
Ingredients:
2 Cups Vermicelli
1 Carrot, peeled and chopped
1 Onion, Chopped
1/2 Cup Peas
1/4 Capsicum, sliced
1 Onion, Chopped finely
1tsp Bengal Gram
1tsp Urad Dal (Black Gram Split)
½ tsp Mustard Seeds
½ tsp Turmeric Powder
Few Curry Leaves, Chopped
5 Green Chilies, Chopped finely
1tbsp Lemon Juice
1 Cup Fresh Coconut
1 tbsp Coriander Leaves, Chopped
Salt to taste
Method:
Boil Carrot and Peas in water, drain and keep it aside.
Boil 1 liter of water and add Vermicelli to it and let it cook for 5 minutes or until done. Drain the water and run cold water to stop cooking. Simultaneously, heat Oil in a kadai/pan, add Bengal Gram, Urad Dal and Mustard Seeds. When the Mustard Seeds starts to splutter and Bengal Gram and Ural Dal turns pink add, Curry leaves, Green Chilies and Onion. Fry until Onion turns translucent.
Add Capsicum and stir for a minute.
Add the cooked vegetables.
Add Salt, Lemon Juice and the cooked Vermicelli and stir in gently.
Add Coconut and Coriander leaves, toss again.
Remove to a serving dish.
Serve hot with your choice of Chutney Powder or Chutney.
