Achari bhindi is a side dish prepared using Okra / Ladies Finger with Pickle Masala.

Ingredients:
15 Bhindi / Okra, chopped into 1″ pieces
1/4 Cup Curds
1 tbsp Mango Pickle
1 tsp Saunf / Aniseed
1/2 tsp Kala Namak / Black Salt
1 tbsp Kalonji / Onion Seeds
1 tbsp Red Chili Powder
1 tsp Turmeric Powder
1 tsp Methi / Fenugreek Seeds
1 tsp Mustard Seeds
1 tbsp Dhania – Jeera / Coriander – Cumin Powder
4 tbsp Oil
Salt to taste
Method:
Heat 2 tbsp Oil and fry Bhindi and keep aside.
Heat 2 tbsp Oil and add Mustard Seeds, Saunf, Methi, and Kalonji. Add fried Bhindi.
In a bowl add Curds, Chili Powder, Pickle Masala, Turmeric Powder, Dhania – Jeera Powder and mix well. Add this to the Bhindi.
Mix well and let it cook for two to three minutes.
Remove to a serving bowl and serve hot with your choice of Indian Bread.
