Tricolor Palya is a vegetable side dish prepared using Carrot, Potatoes and Beans. The name Tricolor because the vegetable colors represents the colors of Indian national flag.

Serves: 4
Ingredients:
1 Cup Beans, Chopped thin and long
1 Cup Carrot, Chopped thin and long
1 Cup Potatoes, Chopped thin and long
2tbsp Oil
½ tsp Mustard Seeds
Juice of ½ Lemon
Salt to taste
For the Masala Powder:
1tsp Methi/Fenugreek Seeds
1tsp Mustard Seeds
2tsp Jeera/Cumin Seeds
5 Red Chilies
Method:
Fry Methi, Mustard Seeds, Jeera and Red Chilies using little Oil separately. Grind together to a powder and keep aside.
Heat Oil and add Mustard seeds, when they start to splutter add the vegetable and saute for 2 minutes.
Close the kadai and cook for another two to three minutes. Add Salt and stir gently.
Add the Masala powder.
Mix well.
Close the lid and cook for 2 minutes or until done. Open the lid and add the Lemon juice and mix well.
Remove to a serving dish.
Garnish with Coriander Leaves. Serve hot with Phulka or plain Rice.
