I learnt to make this dish from my Mami/Aunt, who is a wonderful cook. This North Indian side dish goes very well with all types of Indian Bread and is prepared using Potatoes, Fenugreek and Spinach Leaves and fresh Peas.
Time Required: 40 Minutes
Ingredients:
1 big bunch, Palak / Spinach leaves
1 small bunch Methi / Fenugreek leaves
1 Cup Peas
3 Alu / Potatoes
1 tsp Garam Masala
Salt to taste
For the Masala:
1 Big Onion
6 Garlic Pods
5 Green Chilies
1″ Ginger
1 tbsp Dhania /Coriander Powder
Method:
Boil, peel and cube the Potatoes. Grind the ingredients for the masala to a paste.
Boil water in a vessel and add the cleaned and chopped Palak and methi. Switch off the heat. Let it cool. Sieve and mash the leaves lightly.
Heat oil in a kadai / pan, add the masala paste and stir fry until the moisture evaporates.
Add Coriander Powder, boiled Peas, Potatoes, and the mashed leaves to the masala.
Mix gently.
After the Alu cubes are well coated with the masala mixture, add salt and Garam Masala.
Remove to a serving bowl.
Serve hot with Indian Bread and Salad.
