A side dish prepared using Potatoes and Fenugreek leaves.
Ingredients:
5 Potatoes, peeled diced
1 bunch Methi / Fenugreek leaves, cleaned and chopped finely
2 tbsp Oil
1tsp Saunf / Aniseed
1tsp Mustard Seeds
3 Dry Red Chilies, Broken
1tsp Green Chili, Ginger paste
Salt to taste
Method:
Heat Oil and add Saunf, Mustard Seeds and when they splutter add Red Chilies and Chilli – Ginger paste and sauté for few seconds. Add Potatoes and sauté for a minute.
Close the vessel and cook for two minutes. Open, add Salt and stir for few seconds and add Methi leaves.
Mix well. Close and cook until Potatoes are soft. Remove to a serving dish and serve hot with Phulka, Chapathi or Paratha.
