Time Required: 20 Minutes
Ingredients:
1” thin strips of Cottage Cheese / Paneer
12 Asparagus
1 Red Chili, Chopped finely
1 tsp Cumin Seeds / Jeera
Juice of ½ Lemon
½ tsp Crushed Pepper
1” Ginger, Chopped finely
3 Pods Garlic, Chopped finely
3 – 4 Walnuts, Chopped finely
1tbsp Oilive Oil
Salt to taste
Method:
Remove the brown and woody parts of the Asparagus stem. Use only the tender part. Cut each of the Asparagus stem into 2 to 3 pieces.
Heat Oil, add Cumin Seeds, Garlic, Ginger, Red Chili and sauté for 10 seconds. Add Asparagus, Walnuts and sauté until tender.
Add Cottage Cheese, Salt, Pepper, and Lemon Juice and stir gently. Remove to a serving bowl and serve hot with your choice of bread.
