Gilki Ki Subzi is prepared using Ridge Gourd. A very simple recipe and quick to make for those days when you want to get out of the kitchen soon yet serve a delicious and nutritious dish for the family.

Ingredients:
2 Ridge Gourd, peeled and diced
2 – 3 Green Chilies, Slit
1″ Ginger, Sliced
1 or 2 Tomatoes, Chopped
Juice of one Lemon
Few Curry leaves
1 tsp Jeera / Cumin Seeds
A pinch of Asafoetida
1/4 tsp Turmeric Powder
Few sprigs of Coriander leaves, Chopped
1 tbsp Oil
Salt to taste
Method:
Heat Oil, add Jeera, Asafoetida, Turmeric Powder, and Chilies.
Add Tomatoes and cook for a minute or two. Add Ridge Gourd pieces and mix well.
Add a cup of water and stir. Add Salt.
Cook until the vegetable is soft. Add Lemon juice. Remove to a serving dish and garnish with Coriander leaves.
Serve hot with your choice of Indian Bread or plain Rice.
